Cinnamon is a sweet flavoured spice obtained from the barks of the tree belonging to the family Lauraceae.

Cinnamon tree mainly grows in Sri Lanka, India, and other South Asian countries.  Brown bark of the tree is obtained and dried which rolls into sticks on drying.

Its special fragrance adds a good flavour and aroma to many types of curries, cuisines, and sweets.  There are many varieties of cinnamon trees that grow in which fragrance varies from one another.

The leaves of the tree are dried and also used as a spice, which also adds a different flavour to the culinary as cinnamon rolls.

Cinnamon contains vitamins and minerals, calcium, iron, and fibre. Cinnamon tea prepared has the medicinal property that cures many diseases.  Cinnamon has antiviral, anti-fungal and antioxidant, and antiseptic properties.

Children and pregnant women should avoid cinnamon uses in home remedies.

 Home remedies of cinnamon : 

If you chew a small piece of cinnamon, it relieves cough and throat infection.

Studies are done on patients who are suffering from metabolic syndrome, which showed that cinnamon helps to decrease body mass index, helps to increase good cholesterol, and metabolic syndrome cured to a greater extent.  It is also found that blood pressure lowered and diabetes is controlled.

Cinnamon tea : 

The cinnamon stick is added to water and boiled for about 10-15 minutes.  Then it is allowed to cool for 5 minutes.  You have to drink this daily morning on empty stomach.  You may also have it any time of the day but if you drink it in the morning before breakfast it is more beneficial.

Benefits of Cinnamon tea : 

This herbal drink lowers blood sugar levels, by absorbing glucose from the system.

It rejuvenates the neural system.

This drink helps in weight loss. It helps to burn the unwanted fat and by this, you can gradually lose weight.

It improves digestion and lowers the formation of gas and bloating. 

Cinnamon tea with honey decreases bad cholesterol in the body and increases good cholesterol.  It revitalizes the blood vessels.  It benefits heart health to a larger extent.

It improves the colon function since cinnamon contains a small amount of fiber.  

It may help to prevent cancer but more studies needed to confirm this.

Cinnamon tea with honey relieves arthritis pain considerably.

It also relieves cold, sinus problems.  For this cinnamon tea with honey is used.

It improves our immune system as cinnamon is antiviral, antibacterial.  You can also take milk mixed with cinnamon powder before sleeping.

Gargling with cinnamon water avoids bad breathe.

Cinnamon paste with honey is applied on pimples and skin infections, which relieves the condition.

Cinnamon cultivation : 

Cinnamon is mainly cultivated in Sri Lanka and South India.  Plants are grown by sowing seeds. After it grows 2-3 feet, 4-5 plants are planted together. 

Up to two years plants are manured well and maintained soil condition well.  Plants are watered regularly.  As the side branches grow, they are cut, so that tree grows in an upward straight direction. 

After 2-2.5 years, mature plants are harvested.  Changing of bark colour indicates that the plant is ready to be harvested. Plants are cut and leaves are removed from the stem portion and the outer layer is removed.  Then the bark of the stem is carefully removed and dried in a cool and dry place for 4-7 days.  Dried bark pieces roll to circles.

Cinnamon used in the recipe : 

Cinnamon is used as a flavouring agent in many dishes.   Cinnamon is added to cookies, toasts, rolls, and sweets.  Cinnamon is also added to prepare masala tea.

Garam masala powder :

Garam masala powder is prepared using many spices and this masala powder is added in the preparation of curries and cuisines.
Spices add up special flavour and aroma to the dish.

Ingredients for Garam masala powder :

Cardamom 20 
clove 1 tsp
cinnamon 5-6 sticks
Black pepper 4 tsp
Star anise 2-3
Nutmeg 1
Black cardamom 10
Bay leaves 4-5

preparation :

Dry roast all the above said ingredients separately for one minute, except bay leaves.

Then powder all the ingredients. Store this powder in an airtight container.
